  • One pound of extra firm tofu
  • Freshly minced garlic
  • Olive oil
  • Pepper
  • Six raw cabbage leaves
  • Soy sauce
  • Two avocados

Start by gently pressing the tofu between two dishtowels to remove the excess liquid. Warm the olive oil in a pan and add the garlic. Cook just until a lightly browned before adding the tofu. Cook the tofu on one side for three minutes before flipping onto the other side for another three minutes halfway through the cooking of the second side, add soy sauce to taste and pepper to taste. Continue cooking until browned and warmed through. Scoop the tofu out onto the cabbage leaves and top with wedges of fresh avocado.

This recipe takes advantage of fresh vegetables for texture, flavor and nutrition. The cabbage adds a wonderful crunch, while the avocado gives a creamy fattiness to the meal. These wraps are fantastic served immediately or packed for a picnic or brownbag lunch.
